Satisfied Sunday

Finally finished! It took us three puzzle dates, but it is finally completed!  I forgot how hard puzzles can be. Can't wait to glue this together and use if for wall art in my new bathroom when I move at the end of the month!


I have literally feasted on three things today...

1.) For breakfast a smoothie with chocolate granola sprinkled over top.


In the mix was blueberry yogurt, chocolate milk (note to self pick up skim milk tomorrow), raspberries, handful of spinach

2.) "Energy Bars" from my Stevia cookbook.


Energy Bars
Modified from original recipe by Sarah

2 c quick cooking oats
1/2 c whole wheat pastry flour (white flour will work)
1 tsp baking powder
1/2 tsp salt
1/4 c raisins 
1/4 c chocolate chips
1/2 c nut butter/peanut butter
1/4 c maple syrup
1/4 c MoreFiber Baking Blend 
2 Tbsp flax seed  
6 Tbsp water 


Preheat oven to 375*. Combine all dry ingredients in a medium bowl, stir.  Then add all wet ingredients, I melted the peanut butter a little for mixing purposes, and mix together. The mixture will be dry, but be sure to mix thoroughly. Press the mixture to the bottom of a lightly sprayed 8 x 8 pan.  Bake for 10-14 minutes. Allow pan to cool slightly and cut into bars, then transfer them to a cooling rack.  


Yields 10 bars

I really enjoy these bars!  They have a very healthy, grainy, sweet taste to them.  For any raisin haters out there, you can barely tell they are in these bars; for raisin lovers, add more!  I think next time I may add some dates or some other type of dried fruit as well.  My only complaint about this batch of bars is that they were a little dry (as you can tell in the picture), I will have to add more water or something to make them stick together a little better next time. 

3.) My man came and visited today and I got to pick where we ate for lunch. So of course I chose Chinese!!!  My normal pick would be General Tso's Chicken (it is actually both of our favorites), but he beat me to it :(   Although I was a little bummed, it was a good thing because it forced me to try something new!  I knew I wanted a spicy dish, so I decided to try out Szechuan with shrimp, fried rice and an egg roll.  Guess how much my meal was?  $6.95! So cheap and so delicious!  We are both literally getting 3 meals out of the servings they gave us.  I barely made a dent in my dish when we left. Although nothing beats the flavor of General Tso's, I like that my dish had more veggies and no fried chicken.

He really liked my pick, so I sent some home with him and he let me keep some of his General Tso's. I had my portion of General Tso's for dinner. It was a win-win for me...and I may have found another favorite! 


I finished my night off with a short walk down to the river to read for a little bit.

  1. Mmm I love Chinese too, and General Tsos is so great :) At the mall where I shop, they always give out samples of their chicken so I keep walking by to snag one more sample, just to make sure I like it ;-)
    My Sunday was very satisfying as well! I drove back from my mini vacation, stopped at WF, watched Next Food Network Star...all good things!

  2. @Tessa @ Amazing Asset I know you could potentially have an entire meal just through the samples they hand out, they will just keep on giving them to you no matter how many times you walk by! Love it!
