Chicken Pot Pie

In case you were too busy haveing an awesome Labor Day weekend here is a recap of what happened over my weekend...

Quick question before I share my delicious dinner last night... does the beginning of the school year feel more like a new year than January 1st to anybody else? I always feel so refreshed and ready to go at the beginning of the school year....and I'm not really even in school anymore (I don't really think of my internship as being in school, even though technically it is)!

What's For Dinner
If you're looking for ideas of what to make for dinner tonight, try this one out!  This chicken pot pie is super simple and only takes about 15 minutes of prep and 30-35 minutes to bake.

Chicken Pot Pie

1 bag frozen vegetables
2 c cubed, cooked chicken breast
1 can cream of chicken soup
1 c milk
1/4 c Aunt Jemima Pancake Mix
1/4 tsp black pepper (optional) 

Topping
1 c Aunt Jemima Pancake Mix
1 c water
1 Tbsp seasoning (parsley, garlic & herb, etc.)


Preheat the oven to 400 degrees. In a medium sized bowl, mix the soup, milk, 1/4 cup pancake mix and pepper until smooth.  Put the vegetables, precooked, chopped chicken and pancake mixture into a pan and cook on medium heat until it begins to boil, 4-5 minutes. Pour the heated mix into a cake pan or a 2-quart dish.  

For the topping mix all the ingredients together until thoroughly mixed. Pour evenly over the mix in the pan.  Put in oven and bake for 30-35 minutes.  Be sure to let it cool before you eat or you'll burn all your precious taste buds!

Today
This morning I took advantage of the brownies my bf made... vanilla yogurt, chia seeds, peanut butter and crumbled brownie!  


On another note, check out my new color!  I normally do pinks and reds, but I decided to branch out and I bought a bright purple... it really kind of looks borderline pink, but it's definitely a purple.  I am OCD about painting my nails, I hate it when they are chipped, so a self-mani occurs pretty much weekly in my house.  Do you do self-mani or get them done? What's your favorite polish color?

  1. I am loving that color! I never do my own nails and then rarely get manicures... they are a waste to me because I ruin them in about an hour! Seriously I chip them so darn easily

  2. @Tessa @ Amazing Asset I know mine get messed up and chipped super easily, which is why I opt for self-manis! Even then they chip a lot, but at least I'm not paying an arm and a leg right? Lol
